I’m always looking for new and exciting chicken recipes and this recipe is for Bacon and Cheese Topped Chicken, which to me sounds incredible, so of course I had to try it. I mean, who doesn’t love bacon?

You will need to marinade the chicken for about two hours before you can begin, so keep this in mind and plan accordingly.  You will need to use a skillet to brown the chicken and saute the mushrooms, then it’s just about 20-25 minutes in the oven for an awesome dinner.

The chicken turns out so moist and flavorful, and when you add the bacon, cheese, and mushrooms you get a dinner that not only your whole family will enjoy, but it will become one of those comfort meals that makes you think of home whenever you eat it.

Here’s what you need:

1/2 cup Dijon mustard
1/2 cup honey
4-1/2 teaspoons canola oil, divided
1/2 teaspoon lemon juice
4 boneless skinless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon pepper
Dash paprika
2 cups sliced fresh mushrooms
2 tablespoons butter
1 cup (4 ounces) shredded Monterey Jack cheese
1 cup (4 ounces) shredded cheddar cheese
8 bacon strips, partially cooked
2 teaspoons minced fresh parsley
