Deciding whats for dinner every night is hard enough, but trying to come up with different, tasty side dishes, I think, is an even harder project.  My family gets in ruts where we end up eating mashed potatoes or rice then we make corn or some kind of spinach salad.  I love corn and I love spinach, but sometimes I wish for something different.

I’ve been thinking about broccoli, but broccoli can be boring so I searched and found this recipe that uses broccoli and bacon and other goodies and now I have a new side dish!  There’s nothing to making this dish, you cook the broccoli and then blend everything else with it.  It’s so easy and yet different and tasty.  I have served it with beef and chicken and it would probably go well with seafood too.

Here’s what you need:

6 slices bacon, cooked crisply and crumbled
2 broccoli heads or 8 cups
1/2 red onion, sliced very thin
2/3 cup sharp cheddar cheese, grated
1/3 cup mayonnaise
1/3 cup sour cream
1/4 teaspoon celery seed
Salt and freshly ground pepper
