Try making these muffins, not only are they GOOD, but they are good for you!! These Carrot Zucchini Muffins are made by Becky Von Seggern and posted on Annette’s Sweet Treats. These muffins are made with applesauce that replaces the oil and have regular flour, as well as, whole wheat flour, oatmeal, raisins and pecans that are just a few on the ingredients in these delicious muffins. Sounds great to me! If you are a muffin fan, you really need to try this out!

Here is what you’ll need to make Carrot Zucchini Muffins:

1 cup flour

½ cup whole-wheat flour

½ cup oatmeal

1 cup brown sugar

1 tsp. salt

2 tsp. baking powder

2 tsp. cinnamon

1 tsp POWDERED GINGER

¼ tsp. GROUND CLOVES

½ cup raisins

¼ cup chopped pecans

2 eggs

2 tsp. PURE VANILLA EXTRACT

½ cup carrot, grated (1 regular size)

½ cup zucchini (1 small)

1 tsp. orange zest

1 cup applesauce

½ cup crushed pineapple

½ cup coconut
