Ok, right off the bat, I’m cheating a little bit here. When you click on the links below, you will be taken to a recipe for steak tacos. The above picture is for chicken tacos. In the interests of full disclosure, I found a recipe I liked, but couldn’t find a good image. Then I found this mouthwatering image. It looked so good I almost started licking my screen. Then it hit me! You can use steak OR chicken with this recipe and it wouldn’t change a thing. I hope that clears up any confusion. Now, on with the post!

Tacos are one of those simple recipes that you can get really creative on, so I try to find ideas whenever I can.  This recipe is one I found recently that uses skirt steak, which is easy to cook and very tasty.  These tacos have turned out to be one of my favorites.

I let the skirt steak marinate for about 3-4 hours so they soak up a lot of flavor.  You fix them on the grill and then add the Avocado-Lime salsa which is terrific.  The taste is so fresh your family will just love them.  It will definitely be a recipe that will go in your files and you may even get future requests.  Give them a try and let me know how it goes.

Here’s what you need:

Tacos
4 cloves garlic, chopped
2 tablespoons fresh lime juice
1 tablespoon white vinegar
1 teaspoon crushed red pepper
1 skirt steak (about 1½ pounds), cut into 4 pieces
Canola oil, for the grill
Kosher salt and black pepper
Corn tortillas, warmed

Avocado-Lime salsa
2 limes
2 avocados, chopped
1/3 cup olive oil
1/2 cup torn fresh basil leaves
Kosher salt

Cut away the peel of the limes. Chop the flesh of the limes. Toss with the avocado, oil, basil, and 1 teaspoon salt in a medium bowl. Easy!
