3 cups (1 1/2-pounds) from a whole, cooked chicken (chicken broth may be reserved from boiling meat)
12-ounces pre-shredded sharp cheddar and Monterey Jack cheeses
4 tomatillos, husked and finely chopped
1 medium Anaheim green chile, seeded and chopped
2 small jalapeño chiles, seeded and chopped
1/2 cup fresh cilantro, chopped
12, 6-inch soft corn tortillas
2 tablespoons olive oil
1 medium onion, minced
3 medium garlic cloves, minced
2 teaspoons cumin
1 teaspoon salt
1 cup chicken broth
