Today, it’s raining outside and it’s cooler than it has been, so I thought that I would try to find a perfect rainy day dish that you could make when the weather permits. I picked out Cranberry-Gorgonzola Stuffed Chicken, I hope you like it!!!

This dish is made with boneless skinless breast halves, crumbled Gorgonzola cheese and dried cranberries…check out the ingredients:

6 boneless skinless chicken breast halves (6 ounces each)
1 cup (4 ounces) crumbled Gorgonzola cheese
1/2 cup dried cranberries
2/3 cup chopped walnuts
1/3 cup packed fresh parsley sprigs
2/3 cup dry bread crumbs
1/2 teaspoon salt
1/2 teaspoon pepper
2 eggs, beaten
1 tablespoon Dijon mustard
1/2 cup all-purpose flour

You then place the walnuts and parsley in food processor…then process…combine…coat…dip…now wasn’t that easy!!
