I have a confession to make. Being that I’m Italian (mostly) it may shock most people that when it comes to pasta, I’m not the biggest fan of traditional (or depending on who you ask, stereotypical) spaghetti & meatballs. Not that I don’t like it, mind you, but whenever I go out to an Italian restaurant, I often find myself gravitating towards Fettuccine Alfredo. I just can’t get enough of it! Then again, it IS quite the heavy dish and, yes, it really isn’t the best for you. That’s why I’m ECSTATIC to have found this great Low Cal recipe from the people over at the Food Network! Now I can feel SLIGHTLY better about myself when I eat my favorite Italian dish!

Here is what you’ll need to make Creamy Low-Calorie Fettuccine Alfredo:

1 tablespoon unsalted butter
1 clove garlic, minced
1 teaspoon grated lemon zest
2 teaspoons all-purpose flour
1 cup low-fat (2%) milk
Kosher salt
2 tablespoons Neufchtel or low-fat cream cheese
3/4 cup grated parmesan cheese, plus more for topping
3 tablespoons chopped fresh parsley
12 ounces fresh fettuccine
Freshly ground pepper
