You know by now how much my family and I eat chicken and how we need to shake things up constantly to keep things interesting. This Caribbean-Spiced Roast Chicken is so easy to make…and I’m sure will be tasty too!  I love spicy dishes and I’m sure this one will be on my table next week.

Combine the lime juice and brown sugar together; the set aside.  Mix all the spices together, then brush the chicken with oil; coat with the spice mixture.  That’s all you do, I told you it’s EASY!

Next you place in roasting pan…baste chicken with sauce every 20 minutes…bake until juices run clear.

Here’s what you need:

1 1/2 tablespoons fresh lime juice
2 fluid ounces rum
1 tablespoon brown sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon ground clove
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1 (3 pound) whole chicken
1 tablespoon vegetable oil
