I was looking for a dessert I haven’t made before and I kept seeing a variety of cream puffs. They all looked so good I knew I wanted to try some. I’m no stranger to cream puffs though, I have been using a family recipe for years now, but that might change soon.

This recipe is the one I ended up trying and I’m glad I did, because it really is an easy recipe to follow and the cream puffs (as usual) are addicting!  All the ingredients are very basic.  They do ask you to use vanilla sticks, which add a nice flavor to the puffs, but not everybody can find or like to use them.  Vanilla extract can be used instead and you can find suggestions on how much to use in replacement on any search engine.  They really are delicious, so give them a try.

Here’s what you need:

For the pastry:
8 oz water
8 oz milk
7 oz butter
13 oz flour, sifted
a pinch of salt
9 eggs
For the filling:
34 oz milk
16 egg yolks
4 sticks vanilla
9 oz sugar
4 oz flour, sifted
1 spoon butter
For the whipped cream:
1 1/2 heavy whipping cream
3 tablespoons sugar
Powdered sugar to dust
