Boy, this reminds me of Hawaii!! I can close my eyes, and I see the water at sunset, the warm weather with the cool breeze, and all the Hawaiian shirts…and boy do I wish I was there again! Well, back to reality, Grilled Aloha Chicken is made with pineapple juice and low-sodium soy sauce and other ingredients that go into the marinade. The chicken goes into a ziplock bag with the marinade; it then goes into the refrigerator for 3 hours or overnight.  Meanwhile, slice up the pineapple, and then put in on the grill. Here is what you’ll need to make Grilled Aloha Chicken:

1 c. unsweetened pineapple juice
3/4 c. ketchup
1/2 c. low-sodium soy sauce
1/2 c. brown sugar
2 cloves garlic, minced
1 tbsp. freshly grated ginger
1 lb. boneless, skinless chicken breasts
1 pineapple, sliced into rings and halved
1 tsp. canola oil
Scallions, for garnish
