I enjoy eating cheesecake, whether it’s plain, chocolate swirl, lemon…the more variety the better! If you are anything like me, then you will really love this Key Lime Cheesecake!  It has a hint of lime peel and key lime juice throughout. OMG, this cheesecake is out of this world, it’s made with cream cheese and sour cream, which makes it soooo creamy. I had this cheesecake at a friend’s house, and I liked it so much that she gave me the recipe, so thank you Vicki and Betty Crocker for this wonderful cheesecake. You have to try it, it’s that good!

Here is what you’ll need to make Key Lime Cheesecake:

Lime Crust
1/2 cup granulated sugar
1/2 cup butter or margarine, softened
1 cup Gold Medal™ all-purpose flour
1 tablespoon grated lime peel
1 teaspoon vanilla

Filling
4 packages (8 oz each) cream cheese, softened
3/4 cup powdered sugar
1/2 cup granulated sugar
2 eggs
2 tablespoons grated lime peel
2 tablespoons Key lime juice
2 tablespoons cornstarch
1 cup sour cream

Key Lime Curd
1 cup granulated sugar
2 teaspoons finely shredded lime peel
2/3 cup Key lime juice
2 tablespoons firm butter or margarine, cut up
2 eggs, slightly beaten
