When making chicken, no matter what type of chicken lands on your table, you’re always looking for NEW recipes, more ways to make normal everyday chicken exciting.  I came across this “Lightened-Up Chicken Enchiladas” recipe that appears on Campbell’s Kitchen recipes. I decided to give it a shot one night and boy was I glad I did! It’s also a great way to use your left over chicken that would normally taste totally different. Your family will love it!

Here is what you’ll need to make Lightened-Up Chicken Enchiladas:

1 can (10 1/2 ounces) Campbell’s® Healthy Request® Condensed Cream of Chicken Soup
1/2 cup water
1/4 cup light sour cream
1 teaspoon chili powder
3 cups shredded cooked chicken breast
6 corn tortillas (6-inch), warmed
1/4 cup shredded reduced fat Cheddar cheese
1 medium tomato, diced (about 1 cup)
4 green onions, thinly sliced (about 1/2 cup)
1 cup Pace® Picante Sauce
