I really have to hand to to Ms. Compton for this awesome treat.  Not only do they sound delicious, but all of the ingredients are healthy, even the healthy fats in dark chocolate and coconut oil.  And if you’re worried about the bananas browning, no problem there, as it is air that causes them to brown, and the banana slices in these treats are completely sealed in chocolate and peanut butter.  In Ms. Compton’s words:

…our scrumptious Peanut Butter Banana Cups, rich, chocolatey, peanut buttery cups that melt in your mouth, but are made with 100% clean eating ingredients. Each bite contains nothing but dark chocolate, which is lower in sugar than milk chocolate and rich in flavonoids, peanut butter for protein, banana for a heaping dose of antioxidants, and coconut oil, one of our favorite, healthy substitutes for butter.

Here is what you’ll need to make Peanut Butter Banana Cups:

3/4 cup dark chocolate chips (can also be dark chocolate cut into small pieces from a bar)
1 medium banana, peeled and sliced into 16 rounds
1/4 cup all-natural peanut butter, store bought or homemade
1 tablespoon melted coconut oil, (unrefined extra-virgin preferred)
16 (1.25-inch) baking cups
