Well, it’s that time of year again! Time for the leaves to start falling, and it’s also time for pumpkin spice ANYTHING to start sneaking its way into our lives, whether we like it or not. For the record, I LOVE it!

I’m also a big gingerbread fan and so I love when I find a recipe that includes gingerbread, let alone BOTH. This is a recipe that my daughter came across that is just addicting.  The recipe is for a pumpkin gingerbread trifle and is so amazing you will want to make it again and again!

The layers of gingerbread, pudding mixture, and whip topping not only look so pretty, but taste so good! It’s such a simple trifle, but the taste makes it seem like you took all day to make it.  It’s great for parties because it just looks so formal, and I guarantee you will have very little left overs, if any.  My daughter and I love it so much, we make it just for ourselves, and we don’t feel guilty at all… it’s just to good, you need to try this the next chance you get!

Here’s what you need:

2 (14-ounce) packages gingerbread mix
1 (5.1-ounce) box cook-and-serve vanilla pudding mix
1 (30-ounce) can pumpkin pie filling
1/2 cup packed brown sugar
1/3 teaspoon ground cardamom or cinnamon
1 (12-ounce) container frozen whipped topping
1/2 cup gingersnaps, optional
