I love using fresh fruit when I make an entree and blackberries are one that I don’t find too often in my quest of finding great recipes.

I’m always looking for something different for dinner and I found it in this recipe.  My family eats a lot of chicken and beef, so every week I try to use ham or pork at least once to give us a little variety.  This recipe uses pork tenderloins, fresh blackberries and blackberry preserves and it is wonderful!  Along with that sage and pecans gives the pork great flavor.

It’s a very easy recipe to follow, just keep an eye on the pork when it’s in the skillet because you need to flip the tenders often to get a nice browning.  The tenders are juicy and the blackberries are just a perfect compliment to the dish.  We love spinach in my house, so we always serve it with this dish, but any side dish I’m sure would work well.

1 cup red wine vinegar
5 tablespoons seedless blackberry preserves
1/2 teaspoon salt
1 pound pork tenderloin
3/4 cup fine, dry breadcrumbs
1/2 cup finely chopped pecans
2 teaspoons rubbed sage
2 large eggs, beaten
4 teaspoons olive oil, divided
Fresh spinach leaves (optional)
Garnish: fresh blackberries
