I just love Thai food, and this recipe Spaghetti with Chicken and Thai Peanut Sauce is what I would call a “best of both worlds” dish. Italian AND Thai in one dish? Sounds like a great combo! After you marinate the chicken; it then goes into a saucepan with the peanut butter mixture where you bring it to simmer (make sure you whisk it’s until smooth). You heat a grill pan and cook the chicken; once that’s done you (let the chicken rest awhile) cut the chicken up; top with spaghetti; toss; then top with peanuts. And believe me, it’s as if you ordered it in a Thai restaurant, because IT’S THAT GOOD!!!!!!! I would like to thank Food and Wine for the delicious meal (that you have to try!!).

Here is what you’ll need to make Spaghetti with Chicken and Thai Peanut Sauce:

3 tablespoons plus 1 teaspoon soy sauce
2 tablespoons plus 2 teaspoons lime juice (from about 2 limes)
1 tablespoon cooking oil, plus 1 tablespoon more if needed
4 cloves garlic, minced
3/4 teaspoon ground ginger
3 boneless, skinless chicken breasts (about 1 pound in all)
1/2 cup chunky peanut butter, preferably natural
1 cup canned low-sodium chicken broth or homemade stock
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon dried red-pepper flakes, or to taste
3/4 pound spaghetti
3 scallions including green tops, chopped
1/3 cup chopped peanuts (optional)

My family and I have had a bit of a love affair with Thai food over the years, we just can’t get enough of it! Only thing is it’s hard to find around here– good places anyway.
