After looking for a different type of muffin to start off my morning routine, I decided to choose a Spiced Peach Muffin that I found online. In your supermarket there are fresh peaches, wait until they are soft, and that’s when you buy them for this muffin (you don’t want them hard and you don’t want them super soft, but you want them JUST RIGHT). Just like Goldilocks and the 3 Bears. Then you combine; whisk; fold; sprinkle…then bake for about 25 minutes until they spring back. Thanks to King Arthur Flour for these delicious muffins.

Here is what you’ll need to make Spiced Peach Muffins:

4 1/2 cups King Arthur Unbleached All-Purpose Flour
1 teaspoon salt
4 1/2 teaspoons baking powder
2 cups dark brown sugar
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 large eggs
3/4 cup vegetable oil
1 1/4 cups milk
4 peaches, diced (not peeled) or 3 cups small whole berries or other fruit, diced
1/4 cup granulated sugar, for topping
