I make chicken a lot…and I’m getting tired of it! Maybe if there was a different recipe that my family would eat and enjoy…it wouldn’t be bad at all. Thank god for the internet because I found this great recipe for Spicy Coconut Chicken Strips that sound just about right. My son loves spicy food…he loves coconut…and I’m ALWAYS making chicken…so I think I’ve got a winner!! The only thing I would change would be the amounts of red curry paste and chili powder, if I cut each in half amounts it wouldn’t be that HOT. Well, I think we will all enjoy this meal. Here is what you’ll need to make Spicy Coconut Chicken Strips:

2 eggs
1/2 cup coconut milk
2 tablespoons red curry paste
1 tablespoon cornstarch
1 cup flaked coconut
1 cup all-purpose flour
4 teaspoons chili powder
12 chicken tenderloins
Oil for deep-fat frying

PEANUT DIPPING SAUCE:
1/4 cup chunky peanut butter
1/4 cup coconut milk
3 tablespoons 2% milk
4-1/2 teaspoons reduced-sodium soy sauce
3 garlic cloves, minced
1 tablespoon minced fresh cilantro
1 tablespoon brown sugar
1 tablespoon lime juice
