Deciding what to cook for dinner every night isn’t that easy. Sometimes, what is even harder, is after you’ve decided on what the main dish will be, you have to decide on what you will serve on the side. My family gets in a rut with sides from time to time.  We end up eating salad or corn dishes, so I started to search recipes to mix it up.

Cauliflower is a vegetable that my kids like, but it can get boring to serve it plain or even with cheese.  This recipe takes cauliflower to a different level.  It’s a dish for honey garlic cauliflower and it is amazing! When I first looked at the picture that came with the recipe, I didn’t even realize it was cauliflower, it looked like chicken pieces or popcorn shrimp. The cauliflower turns into this crispy, delicious delight that’s just as tasty as it is fun to eat. The sauce is incredible and believe me it’s addicting.  Your family is going to love it.

Here’s what you need:

1 c. all-purpose flour
2 c. panko breadcrumbs
3 large eggs, beaten
1 head cauliflower, chopped into bite-size florets
1/3 c. honey
1/3 c. soy sauce
2 garlic cloves, minced
Juice of 1 lime
1 tbsp. sriracha
1/4 c. water
2 tsp. corn starch
1/4 c. Sliced scallions
