I love meringues, and this recipe “Vanilla-Basil Meringue Nests with Strawberries” is no exception! You can serve up at your next springtime dinner party. Read the directions carefully, and the vanilla and basil will be the last thing that you put into the meringues. The oven has to be on LOW and baked for 2 ½ hours. Then turn off the oven and let them SIT in the oven for 2 hours more. These meringues have a drizzle of balsamic glaze which makes them have a little touch of sweetness, then are topped with basil. It’s a nice way to welcome spring!

Here is what you’ll need to make Vanilla-Basil Meringue Nests with Strawberries:

4 large egg white(s), at room temperature
1/2 cup(s) sugar
1 pinch table salt
1/2 tsp vanilla extract
1 Tbsp basil, minced (plus extra leaves for garnish)
4 cup(s) (raw) strawberries, hulled, quartered
1/4 cup(s) balsamic glaze

There’s a lot going on is this recipe, but the long wait is worth it! I can’t stress enough though, how careful you must be when following these directions! Speaking of which, you can find them over at Weight Watchers’ website. Wait a second, did I just say Weight Watchers? So these are healthy too? Now you KNOW they’re worth your time! Enjoy!
