I had a neighbor bring over some really nice zucchinis the other day, so I started to search for recipes with some ideas to use them. Well, I stumbled upon one in particular that really piqued my interest.

This recipe is for zucchini ravioli— not zucchini FILLED, mind you– and it turned out to be one of my favorite zucchini meals I’ve ever put together.  Instead of using pasta, you slice the zucchini thinly and the zucchini is used in place of the pasta, making this ravioli a more healthy substitute when you feel like a pasta meal.  With the smells of ricotta, Parmesan, mozzarella, and marinara sauce your kitchen will smell like you’re making a great Italian meal and even though it’s zucchini. The meal will satisfy your cravings and will fill you with comfort and delight!

Here’s what you need:

4 medium zucchini
2 c. ricotta
1/2 c. finely grated parmesan, plus more for garnish
1 Egg, lightly beaten
1/4 c. thinly sliced basil, divided
1 Garlic clove, minced
kosher salt
Freshly ground black pepper
1 1/2 c. marinara sauce
1/2 c. shredded mozzarella
