I was looking for a recipe that was different but still very tasty. I think I found it…how does Apple Walnut Gorgonzola Turnovers sound to you!! You fill these ingredients with thyme and honey onto a 3 by 3 inch square of puff pastry; make sure you paint the edges with beaten egg, this will help seal the pastry. Fold the pastry into triangles, use a fork to crimp the edges. Brush the top with beaten egg; place in refrigerator to chill for a while, then bake. Simple! Here is what you’ll need to make Apple Walnut Gorgonzola Turnovers:

1 1/2 cups peeled, cored, chopped apples (use a good cooking apple such as Jonagold, Pippin, Granny Smith, Jonathan, Golden Delicious, Gravenstein, Mcintosh)
1/2 cup chopped walnuts
1/4 cup crumbled gorgonzola cheese
2 teaspoons chopped fresh thyme leaves (or 1/2 teaspoon dried thyme, crumbled)
2 Tbsp honey
2 7-ounce prepared puff pastry sheets (total 14 ounces)
1 egg, beaten
