I really like grilled cheese sandwiches. I can make them any time of day. Morning, Noon or night, it doesn’t matter, it’s my favorite simple comfort food. My daughter thinks I’m strange because having grilled cheese for breakfast is one of my favorite meals.

I was looking for different grilled cheese recipes to mix things up a little bit and I saw this recipe for Bacon Guacamole Grilled Cheese sandwiches that sounded and looked really yummy. I mean anything that has bacon in it, in my house, is a good thing. And, obviously, I’ve tried bacon with my grilled cheese before, but it never would have occurred to me to throw in guac as well.

Then you add sour dough bread,  jack and cheddar cheese, guacamole and if you like crumbled tortilla chips, adding all of these to the recipe can only make a great sandwich.  You grill it up like you would any other grilled cheese and you end up with a sandwich that everyone will devour! My daughter might be a believer once she tries this. I wont be so strange anymore!

Here’s what you need:

2 slices bacon
2 slices sour dough bread
1 tablespoon butter, room temperature
1/2 cup jack and cheddar cheese, shredded
2 tablespoons guacamole, room temperature
1 tablespoon tortilla chips, crumbled (optional)
