My son will probably hate me for posting this. He flat out HATES mushrooms. You should see his face at the mere mention of the word. My husband and I on the other hand love them to death! This is usually the part where I’m supposed to say something like “he doesn’t know what he’s missing” but no. All I can think of is MORE FOR US! They are so good! And this recipe is downright fantastic!

It’s so great when I have an excellent recipe for dinner, but then I have to think about what I’m going to serve with it.  Finding side dishes are almost just as hard to pick out as the main course.  Mushrooms are one of my favorite sides so I’m always looking for new ideas to make them different.  This recipe is my latest adventure.  It’s so easy to make.  It’s basically just two different cheeses melted onto mushroom caps.  Incredibly simple and really wonderfully delicious.  These mushrooms will go with just about anything.  They are a great choice for your side dish, so give them a try.

Here’s what you need:

10 white or brown mushrooms
1/2 cup white cheddar cheese
1/2 cup orange cheddar cheese
salt and pepper
dried thyme (about 2 tsp)
garnish with freshly chopped parsley
