This is a quick meal (30 minutes!!) that you can make it in a flash! Penne Pasta with Cannellini Beans and Escarole is simply divine! You have to cook in a skillet the escarole, beans and liquid and the rest of ingredients. Then you add the seasonings, and toss with the cooked pasta…and your meal is done. Here is what you’ll need to make Penne Pasta with Cannellini Beans and Escarole:

1 (16 ounce) package dry penne pasta
1 head escarole, chopped
1 (15.5 ounce) can cannellini beans, with liquid
1 (14.5 ounce) can diced tomatoes with garlic and onion, drained
salt and ground black pepper to taste
