Weight Watchers has this “Fudgy Chocolate Brownies” that you really must try. It takes butternut squash to another level! Wait… what did I just say? Who would ever think that the brownies sitting in front of them is made with butternut squash? I know that I wouldn’t! The only thing I would do different would be that I would add the cereal and chocolate chips to the mix. I look forward to making these and trying them out for myself.

Here is what you’ll need to make Fudgy Chocolate Brownies:

2 cup(s) uncooked butternut squash, peeled, diced (about 10 oz)
1/4 cup(s) water
2 tsp vanilla extract
14 Tbsp powdered sugar, (3/4 c plus 2 Tbsp)
2/3 cup(s) all-purpose flour
1/4 cup(s) unsweetened cocoa powder
1/4 tsp baking soda
1/8 tsp table salt
1 1/2 oz bittersweet chocolate, finely chopped (70% cocoa)
2 Tbsp light butter, stick-form, cut up
1 large egg(s)
2 large egg white(s)
1/2 cup(s) crispy rice cereal
2 Tbsp mini chocolate chips
1/2 tsp sea salt, coarse variety (or to taste)
