My mother-in-law was a wonderful baker, and everything, and I do MEAN EVERYTHING she made was from scratch!!! There were no cake mixes in her house at all. One cake I loved to eat was her Coconut Cake…it was so good and delicious. This cake isn’t from scratch, but it close. Well, Betty Crocker makes a Key Lime-Coconut Angel Cake that reminded me of my mother-in-law’s cake so much that I felt the need to share it with you all, so thank you Betty Crocker for making this cake.

Here is what you’ll need to make Key Lime Coconut Angel Cake:

1 box Betty Crocker™ white angel food cake mix
1 1/4 cups cold water
1 can (14 oz) sweetened condensed milk
1/3 cup Key lime or regular lime juice
1 teaspoon grated lime peel
1 container (12 oz) frozen whipped topping, thawed
1 cup flaked coconut
Sliced kiwifruit and strawberries, if desired
