With Fall being right around the corner, especially after this brutal Summer we just had, I just felt the need to share this soup with you all. It just LOOKS like Fall, and it has the taste to match! I thought you would like to have this Maple Squash Soup with Apples before summer comes to an end.

This soup is great, if fact I make it often. It doesn’t take long to make, you just have to puree the soup in batches in your food processor. I would like to say thanks to The Sugar Solution, your cookbook is great! This is one cookbook that I have used since I’ve gotten it… 2008 to be exact. You HAVE to try this soup for yourself!!

Here is what you’ll need to make Maple Apple Squash Soup:

1 Tbsp. olive oil

1 large onion, coarsely chopped

2 large Granny Smith apples (1 lb.), peeled, cored and cut into chunks

¼ tsp. cinnamon

1/8 tsp. cumin

1/8 tsp. salt

1/8 tsp. black pepper

1 package (12 oz.) frozen winter squash, thawed

2 ½ cups chicken broth

¾ cup 1% milk

¼ pure maple syrup

1 chopped apple
