Here is a great idea for dinner this weekend. This recipe for individual chicken pot pies will not only fill your house with incredibly delicious scents, they are also a great way for you and your family to spend fun time together. Sometimes, that’s what counts most!

You can give everyone the opportunity to put together their own pot pie, which allows them to put a little more of their favorites in and maybe leave some of their not so favorites out, for others to use.  It makes for a fun day and ends with an incredible, personalized meal for you and the whole family.  They’re all going to love it and will want them again and again!

Here’s what you need:

1 whole chicken (3 ½ to 4 pounds)
5 tablespoons unsalted butter
1 pound Yukon gold potatoes, peeled and diced
3 medium carrots, peeled and diced
1 medium onion, peeled and diced
12 ounces cremini mushrooms, trimmed and quartered
1/3 cup cognac
5 tablespoons all-purpose flour
1 cup whole milk
1 cup fresh or frozen peas
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh thyme leaves
Coarse salt and freshly ground pepper
1 ½ sheets frozen puff pastry, from 2 (14-ounce) boxes, thawed
1 large egg plus 1 egg yolk
