I am a sucker for anything that comes from Hawaii…and this beautiful cheesecake comes from to you from the Aloha State, and it sure is NO exception!

The crust has Macadamia nuts that are finely chopped, along with graham crackers crumbs, and believe me, this will make a VERY delicious crust.

Then you get Okinana purple sweet potatoes, yes, I said PURPLE SWEET POTATO, cream cheese along with other ingredients to make the simply delicious cheesecake…it gets baked for 1 hour.

For the white topping on top of the cheesecake, it’s called haupia and it’s made with coconut milk, sugar and cornstarch…cook until it gets thickens. Then while the haupia is still warm…you spread it over the cheesecake. And I’m sure this will be the BEST CHEESECAKE YOU EVER HAD!

3⁄4 cups macadamia nuts (finely chopped)
3⁄4 cups graham cracker crumbs
1⁄2 cup melted butter
1 1⁄2 cup Okinawa purple sweet potatoes (takes approximately 2 potatoes; steamed and mashed)
1 pound cream cheese (two 8 oz. packages)
3 large eggs
3⁄4 cups sugar
1 teaspoon vanilla extract
2 cups coconut milk
1 cup sugar
2 cups water
1⁄2 cup cornstarch
