Would you believe me if I said you could make a cookie out of crackers? That might sound crazy…BUT YOU CAN! They’re Salted Caramel Chocolate and Peanut Cracker Stack Bars, and they COULDN’T be easier!

As a baker, I have just about EVERY ONE OF THESE INGREDIENTS IN MY CABINET RIGHT NOW! I’m willing to bet you do too, so that makes things much simpler. But just case, here’s a quick shopping list of things you need for these fairly unique cookies:

8 ounces rich rectangular crackers, such as Club crackers
3/4 cup butter (1-1/2 sticks)
3/4 cup honey
1 cup packed brown sugar
1/3 cup whipping cream
2 cups finely crushed graham crackers
1 teaspoon vanilla
1/2 teaspoon fine sea salt
2 cups chocolate-covered peanut butter cups, chopped into 1/2-inch pieces (9 ounces)
2 cups dry roasted peanuts
1 1/2 cups milk chocolate pieces (9 ounces)
1/3 cup butterscotch-flavored pieces
1/3 cup peanut butter

Its early Saturday morning…it’s raining outside…everyone else is sleeping…so I thought about trying to make these cookies. And so I begin by putting butter, honey, brown sugar and cream into a pan…that’s pretty easy. Next I add some of the graham crackers…simmer 5 minutes. Well, I have done the rest and now it’s time to add chocolate and butterscotch in the microwave…stir peanut butter in…sprinkle with sea salt.

While its chilling, I’ll get ready for the day…well, it’s time to cut the bars…but I have to try a piece…WOW, they taste great…I CAN’T BELIEVE IT!!!!!!

Who knew you could get something like this from simple crackers? Not me, that’s for sure!
