The best and most comforting meal, to me, is a sandwich and a hot sandwich like a grilled cheese can be a great choice.  From the simple white bread, butter, and American cheese recipe to some very mouth watering creations, there are many wonderful choices.  I’ve tried a lot of different recipes, including this one and this is one I go back to again and again!

Who ever would have thought of using something like short ribs in a grilled cheese? Not me, but I’m glad SOMEONE did! The meat itself is already fall-off-the-bone tender, so it really is the perfect compliment for the melty cheese. My mouth is watering just thinking about it! Now you’re cooking the short ribs first so this recipe does take a little time, but you can of course do that part ahead of time.  The smells are amazing and once you can make the sandwiches your mouth will be watering.  Your family will love them.

Here’s what you need:

for the Short Ribs
1 tablespoon grapeseed or canola oil
2 pounds boneless beef short ribs
Salt and pepper to taste
½ carrot, cut into large dice
½ celery, cut into large dice
½ onion cut into large dice
6 medium cloves garlic, cracked
1 cup red wine
Sachet
4 sprigs flat-leaf parsley
6 sprigs thyme
2 bay leaves
1 teaspoon peppercorns
3 cups beef broth
for the Sandwiches
1 2-pound loaf sourdough bread , cut into 16 slices
12 ounces Bel Paese cheese (mild, semi-soft Italian cheese, substitute accordingly)
2 tablespoons plus 2 teaspoons Pickled Red Onions
4 teaspoons unsalted butter, room temperature
4 teaspoons grapeseed oil
