Usually the only time I get fried rice is when I order Chinese food.  But this recipe for “Shrimp Fried Rice” can easily be made at home.  You might even find yourself making it as a side dish for any of your summertime dishes. Really, this goes with anything! This recipe comes to you straight from the Food Network, so you KNOW it’s gonna be good! Also you can feel free to substitute shrimp for chicken or beef or pork or whatever else you can think of!

Here is what you’ll need to make Shrimp Fried Rice:

2 large eggs
Kosher salt
2 tablespoons vegetable oil
1 1/2 tablespoons low-sodium soy sauce
1 teaspoon sesame oil
1/2 pound medium shrimp, peeled, deveined and cut into pieces
1 tablespoon minced peeled ginger
4 ounces fresh or frozen snow peas (thawed, if frozen), halved
1 cup shredded carrots
1 bunch scallions, chopped
