My husband loves Basil Chicken! He loves it so much, that he just HAD have it for Father’s Day when we went to his favorite Thai restaurant. I’m thinking of surprising him one night, so I thought I’d start looking for a recipe, and I found this one for Spicy Basil Chicken that should do nicely. It’s very quick and easy to make, and I’m sure that my family will love it. I just love spicy food, but if that’s not your thing, then you can just leave out the jalapeno chilies. Still tastes GREAT either way!

You can even serve it with some brown rice or Sautéed Snow Peas and Peppers (click here for that recipe) for some added flair.

Here is what you’ll need to make Spicy Basil Chicken:

2 teaspoons canola oil
1/4 cup minced shallots
3 garlic cloves, thinly sliced
6 (4-ounce) skinless, boneless chicken thighs, cut into 1-inch pieces
1 tablespoon fish sauce
2 teaspoons sugar
2 teaspoons lower-sodium soy sauce
1 1/4 teaspoons chile paste with garlic (such as sambal oelek)
1 teaspoon water
1/2 teaspoon cornstarch
1/8 teaspoon salt
1/3 cup sliced basil leaves
