Pirogi’s are a food that I love to eat, but I never tried making them before myself.  I recently found this recipe, though, that is a spinach artichoke pierogi dream!

It’s not a side that can be made with little effort– it will take close to two hours to complete, and I know the ingredient list seems long, but most of the ingredients you’ll probably find in your kitchen already.  You can make the pirogi’s ahead of time because they do freeze well, but try these, have fun.  They really are worth the effort to put together.  They are a great side or appetizer for your next party or family dinner. They will be loved by everyone and you will be proud that you created such perfect dish.

Here’s what you need:

2 1/4 cups all-purpose flour, plus extra for dusting
1 teaspoon kosher salt, plus more as needed
1 large egg, beaten
1 cup sour cream, plus more for serving
7 tablespoons unsalted butter, softened, divided
2 large cloves garlic, minced
10 ounces frozen chopped spinach, thawed and drained (see note above)
8 ounces canned artichoke hearts, drained and chopped
8 ounces cream cheese, softened
1/4 cup grated Parmigiano-Reggiano cheese
1/4 cup shredded mozzarella cheese
1/4 cup shredded provolone cheese
Freshly ground black pepper
Pinch of ground nutmeg
1 tablespoon vegetable or canola oil
Halved cherry tomatoes, for garnish
Cilantro or parsley, chopped, for garnish
Sour cream, for serving
