Summer is now in full swing! Sure, the “official” start of Summer is still a few weeks away, but things are starting to heat up quite a bit! You know what Summer makes me think of?…. aside from blistering heat? It’s watermelon season! Watermelon is one of my favorite things! I wish I could have it all year round! Well… maybe I can. Today i found this recipe for a watermelon cake over on a site called (what else?) What About Watermelon that I just can’t wait to try! I’m curious what a watermelon flavored cake tastes like, but I’m sure its great! This cake IS made with real watermelon juice after all so, I’m sure I’ll love it. And you will too!

Here’s what you’ll need to make Watermelon Cake:

1 (2-layer package) white cake mix
1 small package mixed fruit gelatin powder
1-1/3 cups seedless watermelon cut from the center and cubed into 1-inch blocks
3 egg whites
1 Tbsp vegetable oil
1 cup miniature chocolate chips, optional

FROSTING:

1/4 cup watermelon juice
1/2 cup butter, at room temperature
2 cups powdered sugar
2 (3-ounce) packages cream cheese, at room temperature
2 to 3 drops red food coloring, optional
2 to 3 drops green food coloring, optional
1/8 cup miniature chocolate chips, optional

They could have taken the easy way out and just made this cake only LOOK like a watermelon, just making a red-ish cake with green frosting, but this cake is FILLED with real watermelon, so it couldn’t be more authentic! For the full instructions, check out What About Watermelon now. Enjoy!
