Spring time is upon us, and with the warmer weather, comes more and more fresh local produce to cook with!  Strawberries are easy to get here and they are so delicious when you grab them fresh picked.  This year I thought of doing something different with these berries, and centercutcook.com has a great recipe with a new spin.  These amazing Cheesecake Stuffed Strawberries are quick and easy.  They look so tasty and will really pop out on the table.  I love this idea and want to try other fillings later on, but for now, this is my fave!

Here is what you’ll need to make Cheesecake-Stuffed Strawberries:

20 large, ripe strawberries

1/3 cup heavy cream

2/3 cup cream cheese

1/4 cup confectioners’ sugar

1/2 teaspoon vanilla extract

3 graham crackers (I used gluten-free cookies)
