SO much to love in this dish! I’m not even sure where to start! Right off the bat, I’m a huge fan of chicken & rice. It’s a great combo to be sure. Whether it’s Mexican or Chinese, or any other international variation, it’s just awesome! Then you add cheese which gives the rice a really interesting texture. Then there’s broccoli for some color and a much needed CRUNCH, depending on how you like it that is. And is there something I’m forgetting?… OH YEAH, BACON!!! Need I say more? I found this fantastic recipe on and I recommend that you try this delicious dish for yourself!
