I simply LOVE pork dishes. Mostly because it’s a welcome change from chicken…according to my son “we’ll be growing feathers real soon.” I don’t know how true that is, but perhaps we do have chicken a little too often… Ok, WAY too often! So that’s why I would like to have more recipes to choose from…and this pork dish would appeal to my whole family.

This recipe for Grilled Pork Chops with Fresh Nectarine Salsa is so incredible! This recipe has a spicy coating, which my family would love; it consists of cumin and chill powder, in other words, it gives this pork a nice kick. The salsa that goes on these chops is made with NECTARINES for some much needed sweetness. Sweet and spicy is a great combo!

Here’s what you need:

2 nectarines, pitted and diced
1 ripe tomato, seeded and diced
1/4 cup diced onion
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1/4 teaspoon crushed red pepper flakes, or to taste
salt to taste
1 teaspoon ground cumin
1 teaspoon chili powder
salt and ground black pepper to taste
2 tablespoons olive oil
8 (4 ounce) boneless pork loin chops
