I saw this recipe and I IMMEDIATELY had to go to the store so I could fix them.  These sandwiches looked so amazing… and they are! I mean who doesn’t like shredded beef with mayo, cheese, onions and more. (ok, full disclosure, my entire family HATES mayo with a passion, so I can honestly say you can substitute something else or leave it out all together and this sandwich will still be great!)

I could eat sandwiches everyday and this Philly shredded beef sandwich has turned out to be one of my favorites.  You do have to cook it on the stove top and it does take a little more effort than a normal cold sandwich, but it is so worth it!  This recipe will draw everyone down into the kitchen as soon as you start cooking.  Your family will ask for these again and again!

Here’s what you need:

1 large onion, cut into thin wedges
2 cloves garlic, minced
2 teaspoons olive oil
2 cups Shredded Beef Master Recipe (see Recipe Center)
1/3 cup lower-sodium beef broth
3 bottled pepperoncini salad peppers, stems removed and thinly sliced
1 teaspoon dried oregano, crushed
1 teaspoon paprika
1/2 teaspoon ground black pepper
1/4 teaspoon celery seed
4 slices reduced-fat Monterey Jack cheese
8 slices sourdough bread, toasted
2 tablespoons light mayonnaise
