This Amaretto Mousse Cheesecake is great to make when you don’t want to use your oven.  It’s a “no-bake” recipe from  which is ideal for those hot summer days, but any time will do.  My family loves this cheesecake, and I’m sure you will too!  Sure, you have to chill for 8 hours, but then you blink…and it’s gone!  Boy was it good!  Here’s what you’ll need to make this scrumptious cheesecake!

Amaretto Mousse Cheesecake

2 cups graham cracker crumbs

½ cup margarine, melted

1 envelope KNOX unflavored gelatin

½ cup cold water

3 pkg. (8 oz. each) cream cheese, softened

1 ¼ cups sugar

1 can (5oz.) EVAPORATED MILK (not condensed)

1 tsp. lemon juice

1/3 cup Amaretto liqueur (I put a little more in)

1 tsp. vanilla

¾ cup heavy cream, whipped
