I decided that this weekend I wanted to make a cheesecake to satisfy a craving that I’ve been having for weeks. After searching for desserts the other day, I came upon this recipe for Blackberry Cheesecake Squares. I think these will hit the spot…oh yeah!

The crust is made with vanilla wafers and pecans and is so delicious it really has the best taste and is perfect for this dessert. Then there is the main event, a layer of wonderful fluffy cheesecake that is super creamy and moist.

Finally the topping of blackberries and sugar that turns into a sweet concoction that makes this dessert a favorite of anyone that tries it.  It really hit the spot, taking care of all my cravings.  Give it a try and you will find this recipe to be a real crowd pleaser. Crust
Cooking spray, for spraying foil
1 box vanilla wafers (11 oz.)
½ cup pecans
1 stick butter, melted (1/2 cup)
Filling
3 packages cream cheese (8 oz. each)
1 ½ cups sugar
1 ½ tsp vanilla
4 eggs
½ cup sour cream
Topping
4 cups blackberries
1 cup sugar
1 Tbsp cornstarch
