Who doesn’t like pancakes?  For me, when they’re made with fruit inside and out, there’s nothing better-tasting for breakfast.  And these griddle wonders, adapted by Jennifer Segal over at OnceUponAChef.com from a CHILDREN’S recipe book no less, are made with my favorite fruit – bananas!  And the secret ingredient, vanilla extract, makes this version pretty much perfect.  Bananaaaa plus vanillaaa = nirvanaaaa!!!!

Here’s the ingredient list for the most delicious Banana Pancakes you’ll ever eat:

  • 1-1/2 cups all purpose flour, spooned into measuring cup and leveled off
  • 2 tablespoons sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 small, over-ripe banana, peeled (the browner, the better)
  • 1 cup plus 2 tablespoons low fat milk
  • 2  large eggs
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons unsalted butter, melted
  • Vegetable oil
  • Unsalted butter
  • Maple syrup
  • Sliced bananas
  • Confectioners’ sugar (optional)
