I can’t get enough of the cherries! Of all tiny fruits of its kind (like grapes for instance) Cherries are without a doubt my favorite!  Whenever I pick some up at the supermarket; one thing I know is that I can’t wait to get home and wash them and put them in the fridge—I almost always sneak one or two in my car…two hours later I’m eating the eating them up because they are so sweet and juicy, and soooo gooood!

I got this recipe for a Bing Cherry Fool on Diabetic Living…and you would be a fool if you didn’t try it. You cut the cherries in half and then add WINE, that’s right…wine!!! Then you cover and put in fridge.

Here is what you need:

 

1/4 cup sugar

1 tablespoon cornstarch

12 ounces fresh dark sweet cherries, stemmed, halved, and pitted

1/2 cup dry red wine or pomegranate juice

1 tablespoon finely shredded orange peel

1 8 – ounce container frozen light whipped dessert topping, thawed

1 6 – ounce carton plain fat-free or low-fat Greek yogurt

1 teaspoon vanilla

8 fresh dark sweet cherries with stems (optional)
