This recipe, Peach Semifreddo with Pistachios and Peach Swirl, is a truly unique dessert that I have never heard of…but now I want to make because it sounds SO DELICIOUS! Just check out these ingredients:

 

1 pound ripe, yet firm, peaches, pitted and cut into chunks

1/4 cup sugar*

2 tablespoons lime juice

Pinch salt

3 eggs

1 8 – ounce container frozen light whipped dessert topping, thawed

1/4 teaspoon almond extract

1/2 cup chopped pistachio nuts

8 ounces ripe, yet firm, peaches, sliced

2 tablespoons honey

Fresh mint leaves (optional)

 

It starts off with the peach chunks, 2 tablespoons sugar, lime juice and salt in a food processor; cover and process until pureed and smooth; set aside.

Follow the full directions found on Diabetic Living (click here) but here’s an abridged version, just so you can see how easy this really is …beating the eggs and 2 tablespoons sugar…read directions carefully!!! After you put mixture in prepared pan and smooth the top; put chopped pistachios on top; cover with plastic wrap; freeze for 6 to 24 hours until firm.
