The first second I saw these bars I knew I had to make them! Butterscotch and cashew are two of my favorite flavors, but the thought of combining them was just too much for me to contain! This is a recipe for Butterscotch Cashew Bars and they are amazing!

One tip, if you’re like me, you should buy extra cashews and make an extra batch of bars because they will go fast! Like I said before, I LOVE cashews so much that it was hard to get through this recipe and NOT eat all of them before I used them, So having extra on hand for that very reason was a real lifesaver!

My daughter and I spent an afternoon making these and had a lot of fun! The shortbread crust is so delicious and the caramel and cashew topping is so sweet and amazing.  They will become fast favorites for many of your friends and family, guaranteed!

Here’s what you need:

1 cup unsalted butter, softened
1 cup firmly packed light brown sugar
1 & 1/4 teaspoons kosher salt
2 & 1/2 cups all-purpose flour
11 ounces butterscotch chips
3/4 cup light corn syrup
1 tablespoon plus 1 teaspoon water
2 cups roasted salted whole cashews
