I love making snickerdoodles. They have always been a favorite of mine because they are very simple and tasty and everyone likes them. I also enjoy making Rolo Cookies that have a chocolate Rolo inside the cookie, and when it’s baked…OMG, when it comes out of the oven, I can eat 4 cookies without blinking an eye…that how good they are!

But these Caramel Stuffed Chocolate Snickerdoodles are both amazing and most definitely DIFFERENT! They are chocolate snickerdoodles, as opposed to the usual, I guess you could say, white ones (part of me want to say “vanilla” but that’s not quite accurate) so right away, these are a BIG change up for me. Then you can either put a soft caramel candy or a Rolo in the middle. I think I’ll put the caramel, no need for extra chocolate.

Here’s what you need:

1 1/2 cups plus 2 tablespoons all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
4 ounces (1 stick) unsalted butter, at room temperature
2 ounces cream cheese, at room temperature
1 cup granulated sugar, divided
1 large egg
2 ounces unsweetened chocolate, melted and cooled
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
20 soft caramel candies, such as Kraft, or Rolo candies
