Making baked potatoes as a side dish is big thing in my house. They are quick, easy, and very much hands-off. In other words, they are the perfect thing to have waiting while you give your dinner the finishing touches it needs while keeping that coveted side-dish of yours hot.

We love the huge baked potatoes that you can smother in butter.  This recipe is for a double stuffed taco potatoes and what makes them great, besides the wonderful flavor is that they’re not just a side, they actually make a full meal!

When I make these potatoes I usually just fix a nice salad to go with them and it’s plenty.  Depending on your taste, you can use your choice of taco seasoning, mild, medium, or hot salsa and if you want change up the cheese you use with something with more of a kick, it’s all up to you.  Give it a try and let me know what you think.

4 large baking potatoes
1 pound lean ground beef
1 small onion, chopped
1 packet taco seasoning
¼ cup water
½ cup sour cream, plus extra for serving
¼ cup milk
1 cup shredded cheddar cheese
2 green onions, sliced
