Every once in a while my family likes to have finger food fun nights. Nothing TOO fancy, it’s kind of a rule we try to follow. We pick out a couple of great movies and then a variety of foods that you need nothing but your fingers to eat.  It’s fun and can be really great. It’s something I hope many families do once in a while, and if you don’t, maybe you should. You can even use this recipe if you like!

This recipe is for cheese and rice quesadillas that are one of my favorite appetizers.  The chopped green chilies are optional, but I suggest you use them.  They’re great without them, but REALLY great with them!  You can use any kind of spread and Mexican rice you want, I found this recipe on the Knorr website so of course they suggest their own products.  Whatever brand of ingredients you use, these quesadillas won’t last on the dish very long.

Here’s what you need:

2 cups water
1 Tbsp. I Can’t Believe It’s Not Butter!® Spread
1 package Knorr® Fiesta Sides™ – Mexican Rice
1 can (4 oz.) chopped green chilies, drained (optional)
10 (6-in. ea.) flour tortillas
1 1/4 cups shredded Monterey Jack cheese (about 6 oz.)
