The baked potato is always one of my favorite dishes. Whenever I either don’t feel like making a full side dish or I simply run out of time to do so while making the main meal, baked potatoes are always my go-to side. I like them because they are quick, easy and fairly hands-off, which allows my full attention to be elsewhere. Is there anything better than being able to do two things at once on purpose?
So when I ran across this recipe for Cheesy Bacon Hasselback Potatoes, I knew it was a keeper! I looked at the picture of these amazing potatoes and could just imagine one being placed in front of me. I could not stop smiling! We’re talking very basic ingredients starting with a baked potato, then adding zesty Italian dressing, cooked bacon, extra sharp cheddar cheese and then topping it off with chives and Parmesan cheese.
Obviously, this requires more effort than a standard baked potato, but not too much. All you have to do is prep beforehand, then the rest is simple. This couldn’t be more perfect. They’re amazing and I’m sure will be a side that you will go back to again and again. Your family will love them!
Here’s what you need:
4 baking potatoes (1-1/2 lb)
6 Tbsp. KRAFT Zesty Italian Dressing, divided
12 slices OSCAR MAYER Bacon, cooked, each broken into 4 pieces
4 oz. (1/2 of 8-oz. pkg.) CRACKER BARREL Extra Sharp Cheddar Cheese, cut into 24 thin slices, then halved
2 Tbsp. KRAFT Grated Parmesan Cheese
1 Tbsp. chopped fresh chives
